This is my first recipe blitz! The idea is find a whole lot of different takes on one type of recipe to fill out my recipe folder and hopefully discover something new in the process.
I had Tortilla Soup for the first time at my friend Ang’s house the week before. It was so, so tasty and I have been craving it ever since. So it had be for Tortilla Soup for my inaugural recipe blitz.
Here are some of the ones that looked the best (or interesting)…
- Heidi Swanson of 101 Cookbooks does a super gourmet Vegetarian Tortilla Soup with cherry tomatoes and feta cheese.
- Another Vegetarian Tortilla Soup with zucchini.
- This New York Times recipe does away with the tin of canned tomatoes and has you roasting all your tomatoes.
- Erin Franzman of New York City, writes: “After reading that duck was part of the Aztec diet, I put it in this simple, hearty tortilla soup for an unexpected, rich twist.” He provides his Duck Tortilla recipe for Gourmet magazine readers.
- Cafe Annie in Houston, TX gave Gourmet magazine their Tortilla Soup with Crisp Tortillas and Avocado Relish which sounds positively divine.
- If you want to use your slow cooker, you can try adapting Elena’s Slow-Cooker Chicken Tortilla Soup. The recipe calls for shredded chicken meat which is good if you have leftovers. But if you don’t, just put in a raw chicken breast at the beginning (make sure you have it on high for at least an hour), once the soup is cooked, pull it out and shred it with your fingers.
- Jamie Oliver has a recipe for Rustic Tortilla Soup in the Sunday Times. It has carrots in it.
- Melissa Camero Ainslie from bitchincamero has a recipe for Butternut Tortilla Soup as well as one for Chorizo and Blue Corn Tortilla Soup. Mmmmm… chorizo…
- A hearty Tortilla Soup from Australia’s Good Taste magazine.
- A cut down but super Easy Tortilla Soup. I’m presuming (hoping) that tomato sauce is what we Australians call Tomato paste as opposed to Ketchup. It sounds like a great store cupboard standby to which you can add any additional ingredients you had (or not).
- Amanda’s Amazing Tortilla Soup. She goes to it with a blender for a puréed soup.
- Gena from Choosing Raw has developed a Raw food Tortilla Soup.
- I like this simple (hehe) Simply Recipes recipe for Tortilla Soup.
- And Aaron and Lindsay’s Chicken Tortilla Soup Extravaganza from This Week for Dinner looked superb with crisp tortilla chips and sour cream.
This video from Good Bites shows a bit more complicated Tortilla Soup that involves roasting vegies and then blending them (here’s the recipe).
In the end, I didn’t even make Tortilla soup but a Vegetarian Nachos Soup (I used corn chips instead of tortillas). I’ll post my adaptation tomorrow!
