
Unfortunately my lovely husband is allergic to tomatoes (though we both love them!) and I’ve planned to cook a lasagne tonight because it’s been a while. Usually, I do a super quick version with tomato sauce when I’m cooking for my parents and he just has to hear how good it was afterwards when I get home. Tonight, I really want to do a lasagne but I wanted one that he could at least try leftovers. It is not so easy to find recipes for lasagne that don’t feature tomatoes so I thought I’d do a little recipe blitz and see what I could find online.
Here are some various lasagne recipes – all without any trace of a tomato:
- White Wine Lasagna with Spinach and Basil from foodie on Bloomacious Cafe looks both simple and divine
- A simple white lasagne. It uses store bought Alfredo sauce but you can make your own with this quick recipe or this slightly longer one
- This zesty creamy lasagne has very sketchy instructions (there are missing items in the ingredients, like eggs), no doubt because it originates from an old forum post. But it does sound tasty enough to use it as a starting point for your own recipe
- An Easy Spinach Lasagne with store bought Alfredo sauce again but you can substitute your own
- Mindfood’s Vegetarian Lasagne Cake which would be easy enough to do as Lasagne rather than Lasagne Cake.
- Linda Carnation’s Vegetable Lasagne with lots of vegies, but no tomatoes
- Tomatoes are Evil have a very handy list of alternative pasta and pizza sauces without tomatoes and a tomato free lasagne recipe
- Baking and Book’s beautiful Butternut Squash Lasagne with Fresh Sage & Thyme
- Valli Little’s Pumpkin, Sage & Ricotta Lasagne
And while not a lasagne, I saw a handy recipe for roasted capsicum sauce in a ravioli recipe that could be used to substitute for tomato sauce in most lasagne recipes (or look at the Tomatoes are Evil alternatives).
If anyone has a good tomato free lasagne recipe please let me know…
